Tokaj (pronounced toe‑kye) is Hungary’s most storied wine region and the world’s first officially classified appellation. Set on volcanic hills in the country’s north‑east, it enjoys misty autumn mornings and the meeting of two rivers, conditions that encourage noble rot for the legendary Tokaji Aszú.
