Furmint
Furmint is Hungary’s flagship white grape – the backbone of Tokaji Aszú and the rising star of dry volcanic whites. In Tokaj’s mist‑shrouded hills, early‑harvested Furmint yields sleek dry wines that taste like Chablis with a volcanic twist. The grape’s Riesling‑level acidity and neutral profile allow volcanic minerality and autolytic notes to shine. Typical flavours range from lime blossom and green apple to crushed stone and a smoky edge, while ageing brings hints of quince and honey.
Furmint’s versatility extends beyond still wines. In the right hands it becomes an elegant base for traditional‑method Pezsgő, developing citrus, pear and brioche notes during long lees ageing. And when noble rot concentrates its sugars, Furmint produces the world‑renowned Tokaji Aszú, delivering apricot, honey and citrus peel richness balanced by electric acidity.
