Egri Bikavér
Egri Bikavér, famously dubbed “Bull’s Blood,” is Hungary’s legendary red blend. Inspired by the 1552 siege of Eger, the name evokes the wine’s power and the defenders’ strength. Modern Bikavér must be a blend of at least three grapes with Kékfrankos as the backbone. Supporting varieties often include Pinot Noir, Kadarka, Syrah and Cabernet, creating wines that balance depth with freshness. When well‑made, Egri Bikavér mirrors the region’s cool climate and volcanic roots with vibrant acidity, fine tannins and a subtle ferrous minerality.
On the palate, expect sour cherry and plum aromas, hints of earth and smoke, sweet spice and an iron‑tinged savouriness. The blend’s elegance stems from Eger’s rhyolite tuff base topped by brown forest clay and limestone. These wines are medium‑bodied and food‑friendly, perfect with grilled meats, hearty stews or local dishes like barbecued sambal stingray.
