Középhegy is one of Zsirai’s favourite vineyards in Mád, located on the northwestern edge of the village. The soils are built on bentonite bedrock with quartzite rhyolite tuff beneath, giving the wine its firm mineral backbone and distinctive Tokaj character.

Made with a natural approach, the wine is spontaneously fermented with minimal intervention and no additives that would alter its core personality. The result is a pure, expressive dry Furmint that captures both the power of the vineyard and the elegance of the variety.

𝗙𝗨𝗡 𝗙𝗔𝗖𝗧! Középhegy means “Middle Hill” in Hungarian, named for its position between two vineyard hills in Mád. This cooler, protected site helps preserve Furmint’s bright acidity, while its volcanic bedrock gives the wine its concentrated fruit, stony minerality and long ageing potential.

Zsirai

Zsirai Winery is a family-run estate led by sisters Petra and Kata Zsirai, who took over the winery after the passing of their father, Csaba Zsirai. What began as a family dream has grown into one of Hungary’s most charming and quietly expressive wineries.

The estate works across three Hungarian wine regions: Tokaj, Somló and Villány. Their heart, however, is in Tokaj, where they are based in Mád and focus heavily on Furmint, Hárslevelű and the region’s historic sweet wines.

Zsirai’s philosophy is rooted in naturalness, vineyard expression and minimal intervention. Their wines are made to show the diversity of Hungary’s terroirs, from the volcanic soils of Tokaj and Somló to the warmer, fuller-bodied character of Villány.
