This was inspired by Domaine Huet's revered Pétillant. Expect hints of sweet pastry, rising bread and dry, yet honeyed palate. It's brisk, with a clean cut, and has all of the waxy, floral qualities of a Tokaj wine.

Tony introduced this fascinating sparkling wine in 2007. Made by the Méthode Champenoise, with 4 years on the lees before disgorgement and dosed (when necessary) with a drop of aged Tokaj Aszu sourced from the same Henye vineyard. Pezsgő is the local dialect for "sparkling" and Henye is the name of a historic, lauded vineyard in the area.

The Henye vineyard is reserved for pezsgő and Sec. In rare vintages, botrytis will develop providing aszú berries for the estate's 6-puttonyos aszú. The soil in Henye is deep loess with huge rhyolitic tuff boulders as bedrock, providing the highest level acidity among the winery’s vineyards.



𝗙𝗨𝗡 𝗙𝗔𝗖𝗧! Henye is a fabled vineyard in Tokaj history: One of the two last vineyards held onto by the Hapsburgs and was the source for imperial wines. Earlier, wines from this specific vineyard were what Peter the Great and Catherine the Great sent dragoons to guard and bring to the Russian Imperial Court in St. Petersburg each vintage.
